Our chef, Nikolaj Skou Poulsen, originally from Denmark, found a true source of inspiration in the richness of French cuisine and the quality of its exceptional products. Alongside the general manager, Mai Kappenberger, and the renowned Franco-Danish chef Francis Cardenau, who recently joined the board of directors, Nikolaj is breathing new life into this place steeped in more than 2,000 years of history.
Together, they bring the castle back to life through a unique sensory experience, where French conviviality and hospitality subtly meet Nordic charm and aesthetics, creating a culinary signature that is elegant, bold, and deeply touching.
Our cuisine draws its essence from the nature surrounding Château de Fontager. We prioritize locally sourced products, complemented by aromatic herbs and vegetables carefully grown on site.
At the beginning of 2024, we took an important step by planting 100 apricot trees, the first stone of our future orchard and a symbol of our commitment to sustainable gastronomy rooted in its environment.

A leading figure in Franco-Danish gastronomy, Francis Cardenau has joined the board of directors of Château de Fontager Starting in early 2024, Francis's mission is to solidify and develop the establishment's culinary identity by structuring a network of exceptional local producers, recruiting skilled talent, and enriching the menu offerings alongside Nikolaj Skou Poulsen, in order to deliver unique gastronomic experiences. Originally from France, Francis is recognized as one of the great pioneers of the culinary scene in Denmark. He has served for several years on the board of directors of the Bocuse d'Or Denmark, which he chaired for three years, embodying the high standards and transmission of gastronomic expertise. In 2023, he was awarded the prestigious title of Disciple of Escoffier, recognizing his commitment and influence in the world of haute cuisine.
